Khasta Matar (Peas) Kachori

This is a not very complex recipe. Simple to make. I have added an overview video to guide you and give you an idea of the process if you are an experienced cook else read on for step by step instructions

Preparation time — 15 minutes

Cooking time — 20 to 25 minutes

Level of cooking — medium

Types of cuisine — Indian Breakfast / Snack

Ingredients:

For making dough-

  • All Purpose flour / Maida — 2 cup
  • Oil — 1/4 cup
  • Salt — 1/2 tsp
  • Baking powder — 1/4 tsp
  • Carom seeds — 1/4 tsp
  • Onion seeds — 1/4 tsp
  • Warm water — to make a dough

For stuffing –

  • Green peas — 2 cups ( boiled & mashed )
  • Ginger Paste — 1/2 tsp
  • Garlic paste — 1/2 tsp
  • Dry mango powder — 1/2 tsp
  • Chat masala — 1/2 tsp
  • Turmeric powder — 1/4 tsp
  • Salt — as par taste
  • Oil — to cook and deep fry

Dry Roast Spices-

  • Coriander seeds — 1 tbsp
  • Red Chilli flakes — 1 tbsp
  • Cumin seeds — 1/2 tbsp
  • Black pepper — 1/2 tsp

Preparation- 

To make the green peas stuffing –

  • Boil the green peas and mash them
  • Dry roast all the spices mentioned above for dry roasting and keep aside – once cold coarsely crush them.
  • Heat 1 tbsp of oil in a pan, once hot add paste of ginger & garlic and saute for 1 minute
  • To this add mashed green peas, roasted spices, turmeric powder, dry mango powder, chat masala & salt as per taste
  • Cook for 2 to 3 minutes mixing well

To make the dough for Kachori –

  • Kneed al the ingredients mentioned above for dough with luke warm water (adding in small quantity)
  • The dough should be medium-firm
  • Cover the dough with moist muslin cloth and let it rest for 10 minutes

To make Kachori- 

  • Take a handful of the dough in your palm and dig a small dent into its middle.
  • Stuff a sufficient amount of the peas mixture into this dent, make balls and flatten them
  • Deep fry on low-medium heat to get the crispy and flaky texture and taste
