Vada Pav

Vada pav is a roadside food stall classic. This famous Maharastrian mouth watering snack consists of a fried potato patties and pav. It is hinted with dry garlic, Tamarind and coriander chutneys. It is one of my favorite snacks

Preparation time — 5- 8 Minutes

Cooking time — 10 – 15 Minutes

Ingredients – 

For potato patties

  • Potatoes small —10-15
  • Garlic cloves —7 – 8
  • Green chilies — 2-3
  • Piece of ginger— about 1/2 inch
  • Black mustard seeds — 1/2 tsp
  • Curry leaves — 10-12
  • Asafoetida powder — a pinch
  • Coriander powder — 1/2 tsp
  • Salt — as per taste
  • Turmeric powder — 1/4 tsp
  • Garam masala — 1/4 tsp
  • Dry mango powder—  1/2 tsp
  • Coriander leaf— finally  chopped
  • Lemon juice —  few drops

For batter

  • Gram flour — 1 cup
  • Rice flour — 2 tbsp
  • Carom seeds — 1/4 tsp
  • Onion seeds — 1/4 tsp
  • Salt—  as per taste
  • Turmeric powder — 1/4 tsp
  • Baking soda — 1/4 tsp
  • Oil—  for frying and cooking

Pav, Coriander, Tamarind Chutney and Dry Garlic Chutney powder, fried green chili for serving 

Method of Preparation-

  • Boil, peel, and mash the potatoes.
  • Grate/Finely Chop – Garlic, Green chilies, and ginger.
  • Heat 2 Tbsp oil in a pan, once hot add mustard and curry leaves.
  • Add grated/chopped garlic, green chilies, and ginger and saute for 1 minute
  • Add the mashed potatoes all dry spices and mix well and cook for 3 to 4 minutes
  • Sprinkle some chopped coriander leaves and lemon juice, switch off the flame and let it cool down
  • Once cold take a small ball from the mixture, shape it like patties and keep aside

  • To make the batter – Mix all the ingredients listed above for batter (except oil).  Using water sparingly whisk the mixture into a thick batter – Make sure there are no lumps
  • In a deep and thick bottom pan heat sufficient oil to fry the patties
  • Dip the potato patties in the batter and deep fry on medium heat till golden.

To Serve – 

  • Slit the pav into half (make sure you do not cut it all the way and leave the end joint
  • Apply coriander, tamarind chutney to both (inside sides of the slit pav)
  • Place the fried patties inside the pav, sprinkle dry garlic chutney over the patties
  • Enjoy with fried green chilies

As a home that loves to eat, we hold food, and the people who prepare it, close to our hearts. I was drawn to food from the time I could reach the kitchen counter and was tutored by my mother.
