Oats &  Veggie Poha

Oats Poha is very healthy and delicious breakfast, This is a super quick and simple, can be prepared with just basic ingredients. This makes an ideal breakfast for Kids tiffin, office breakfast or just to enjoy with a cup of tea or coffee on a lazy weekend. Just adding oats to the traditional Poha gives this a great new flavor and texture. This is a great breakfast for people with Diabetes and Cholesterol problems

Cooking time – 15 minutes

Ingredients – 

  • Rice Flakes / Poha/ Chiwda – 1 cup
  • Regular Rolled Oats – 1/2 cup
  • Chopped mixed vegetables – 2 cups (Carrot, Green beans, Cauliflower, Green Peas, Potatoes)
  • Roasted Peanuts – 1/2 cup
  • Onion – 1 medium size chopped
  • Green chili – 3 to 4 Chopped
  • Curry Leaves – 10 / 12
  • Black mustard seeds – 1 tsp
  • Turmeric powder – 1/4 tsp
  • Salt as per taste
  • Sugar – 1 tsp
  • Asafoetida /  Hing  – a pinch
  • Ghee – 1 tbsp
  • For Garnish – Lemon Juice and Coriander leaves & Bhujiya Sev

Method of Cooking- 

  • Washed and Chopped all the vegetables and keep aside
  • Washed Rice flacks and Oats together and keep aside
  • Roast peanuts and keep aside
  • Heat ghee in a wok or Kadhai  add  mustard seeds, curry leaves,  asafoetida (hing), green chili, chopped onion and roasted peanuts – saute for 2 minutes
  • Now add all the chopped vegetables and cooked till the gets vegetable soften add salt and turmeric (Add 1 or 2 tbsp of water if needed)
  • Add Poha and Oats,  mix well for 1 or 2 minutes and then switch off the flame

  • Sprinkle Sugar (optional), lemon juice, fresh chopped coriander leaves and bhujiya Sev
